Recipe: Flowerhead Early Grey Tea Cake

When Cocojune (say it with me, COCOJUUUUNE) reached out wanting to collaborate on a recipe I couldn't say no! Their vegan coconut yogurt is so refreshing and good. I knew a tea cake like this one would be a great way to incorporate the yogurt into the cake and the glaze. Flowerhead's "Early Grey" tea is a classic and pairs perfectly mixed into the cake and as a hot cup on the side. You can choose any of the Cocojune flavors but I chose to use the Vanilla Chamomile in the batter and the Lemon Elderflower in the glaze. Enjoy our delicious tea yogurt baby cake for your next brunch or as you lounge around your apartment.  

  
WHAT YOU'LL NEED: 
1 CUP VEG OIL
2 CUPS ALL PURPOSE FLOUR
1 1/2 TSP SALT
1/2 TSP BAKING POWDER
1/2 TSP BAKING SODA
2 EGGS
1 CUP SUGAR
1 CUP VANILLA CHAMOMILE COCOJUNE YOGURT
2 TBSP FLOWERHEAD EARLY GREY LOOSE LEAF TEA
2 TSP VANILLA EXTRACT
2 TSP DEMERARA SUGAR
ZEST OF WHOLE LEMON

THE GLAZE: 
1/4 CUP LEMON ELDERFLOWER COCOJUNE YOGURT
1/2 CUP POWDERED SUGAR
JUICE FROM HALF LEMON

Early grey tea cake
Preheat the oven to 325°. Lightly coat a 9x5 loaf pan with vegetable oil and line with parchment paper.

Whisk flour, salt, baking powder, and baking soda in a medium bowl.

Whisk eggs and sugar in a separate large bowl for a minute until frothy. Whisk in Vanilla Chamomile Cocojune yogurt, Flowerhead's Early Grey tea, vanilla extract and lemon zest. Gradually stream in vegetable oil, whisking constantly. Add dry ingredients and whisk to combine. Scrape batter into prepared pan and smooth top. Sprinkle the top evenly with demerara sugar. Bake cake until a toothpick inserted into the center comes out clean, should be around 1 hour.

Make the glaze by whisking Lemon Elderflower Cocojune yogurt with powdered sugar and the juice from half a lemon. Add more powdered sugar if you would like to increase the thickness of your glaze. Once baked, pull out your cake and let it cool in the pan for around 15 minutes. Remove the cake and drizzle the glaze on top once the cake is completely cool. Slice and serve with a cup of Flowerhead's Early Grey tea. Wow, That's delightful.
